We decided to clear most of the collard greens out of the garden to make room for the carrots and green onions. As we were piling up the plants outside the fence, the dogs kept stealing them and eating the stems (in Fleck's case, the entire thing). I thought that they would be sick from all of the ruffage, but they seemed to have survived.
We did pull off the more tender leaves and I am going to cook them up and freeze them. I don't think we will do collards next year. I am thinking it might be fun to do spinach instead.
